A unique curry dish that is so good, so simple to make and so full of good stuff it's untrue. It's great to be able to give your vegetarian friends something a bit different once in a while and provided they don't have a nut allergy this one of those dishes.

The coconut based creamy sauce combined with the lovely texture of the nuts is such a great combination and it's just so moorish.

  • 250g cashew nuts
  • 2 tbsp coconut oil
  • 1 large onion, finely chopped
  • 10 curry leaves
  • 2 green chillies, chopped
  • ½ tsp roasted cumin seeds, ground
  • ½ ground turmeric
  • 1 tsp chilli powder
  • 7cm stick of cassia 
  • 300 ml coconut milk
  • 150 ml coconut cream
  1. Soak the cashew nuts in a small bowl of water for an hour. Once softened, drain off the water and set to one side to dry off.
  2. Meanwhile, heat the oil in a pan once hot add the cumin, cinnamon stick and curry leaves. 
  3. Once the spices are aromatic add the onions and stir to cook for about 10 minutes.
  4. As the onions begin to change colour stir in the turmeric, salt, chilli powder, chillies and stir.
  5. Add the drained cashew nuts and stir to combine.
  6. Pour in the coconut milk and once it has heated through leave it to simmer and thickened and reduce.
  7. Remove from heat and check the seasoning - adjust if required. Pour into a bowl to serve with some rice and top with a little extra coconut cream.

    Look good - but what's Cassia?

      Hi Cassia bark is a spice that looks like thick bark and has a similar aromatic to cinnamon but it's sweeter. You can find it in most places labelled as cinnamon but you will see that it looks different as its thick brown and thicker then wafer thin cinnamon. Hope this helps Hari

    I've tried a few of your vegan recipes and they've all turned out delicious! Decided to check out some of your vegetarian dishes to see if any can be easily veganised. Came across this one and it's already vegan as far as I can tell? Glad I checked!
