Bitter Gourd

Also known as bitter melon this vegetable has a unique look about it and has a flavour that is an acquired taste. From the name you can tell that it is a bitter vegetable, which is cooked when it's green.

Using Bitter Gourd in Indian Cooking

In North Indian cooking these tend to be stuffed with fried onions a dry masala spice paste and then they are fried. These are usually complimented with a lentil dhal and yoghurt.

In South India the bitter gourd is usually cut up and used in many different ways. I have to say this is a real favourite but it does have an acquired taste that you grow into. It takes me right back to childhood when these were just given to the adults as a real treat.
