The cauliflower is a beautiful looking vegetable with white florets all enclosed in luscious green leaves. It is a very versatile vegetable and like most can be boiled, steamed and fried.

Using Cauliflower in Indian Cooking

In Indian cuisine the cauliflower is used in a variety of different ways. Aloo Gobi being the most well known is a delicious dish of cauliflower and potatoes cooked in a thick tomato masala. It is also used in Pakora, or as a stuffing for fried breads. There is a little bit of skill required with cooking the cauliflower as you don't want the florets to breakdown into a mush - you need them to remain whole and crisp yet cook through until they are soft and delicious.
