Madras

Create a typically hot, fiery and tangy Madras, using my Madras curry kit. I love this with lamb, but feel free to substitute with chicken, vegetables or even paneer. This is a challenging dish, but once mastered will quickly become one of your favourites!

Ingredients:

Black peppercorns
Cassia bark
Chilli powder
Cloves
Coriander seeds
Cumin seeds
Curry leaves
Fennel seeds
Fenugreek seeds
Mustard seeds
Tamarind
Turmeric
White poppy seeds
You'll also need:

Chicken, lamb, beef, fish, paneer or vegetables
Vegetable oil
Onion
Garlic
Ginger
Green chillies
Tinned tomatoes
Salt
Fresh coriander
