Using Amchoor (Mango Powder) in Indian Cooking

This is a fruity spiced powder made from ground unripe green mangos.

Amchoor is made by harvesting the small, early-season mangos while they are still green and unripe. They are peeled, thinly sliced, and dried in the sun. The dried slices look like strips tree bark. The slices are processed and ground into fine brown powder which is sold as amchoor. It has a sweet fragrance and a very special sour flavour that is used in dishes to give an acidic fruity tang.

Amchoor is mainly a North Indian flavouring used to add a sour tangy fruitiness without adding any liquid. It is used to flavour vegetable fillings for samosa and pakoras. Also for stews, dhals, chutneys, pickles and to tenderise meat, poultry, and fish.
