A kachumber is a lovely light salad and you can practically make with anything. This is a gorgeous corn salad that is sweet and vibrant and when it's mixed with fresh tomatoes, cucumber and dressed with a tangy Indian spiced dressing it makes this makes a superb healthy side. You can have it for lunch, as a barbeque side or even as a delicate little starter. Do try and get hold of some crispy corn kernels to sprinkle over this as it adds texture and another layer of delicious flavour.

  • 300g tin sweetcorn  
  • ¼ of a cucumber, peeled and diced
  • 2 tomatoes, diced
  • crunchy corn (bought from supermarkets)
  • handful of pomegranate jewels 
  • handful of pea shoots 

Dressing

  • ½ tsp honey
  • 1 lime, juiced
  • ½ tsp paprika powder
  • 3cm fresh ginger, fine chopped
  • 1 green chilly, fine chopped
  • large pinch coriander leaves, chopped
  • Salt to taste

Method

  1. Wash the corn and leave to dry.
  2. Mix all the dressing ingredients in jam jar and shake to mix all the flavours together. Set to one side. 
  3. Place in a bowl the corn with the diced cucumber and diced tomatoes.
  4. Sieve the dressing over the salad and toss it together.
  5. Sprinkle in the pea shoots and finally, sprinkle the crunchy corn and pomegranate on top and serve.
