Refreshing nimbu pani with a zing of ginger

This is a wonderful take on Shrikanji or nimbu pani. Nimbu pani is a refreshing north Indian drink that is sold on every street corner as an amazing thirst quencher. This version I have added a little zing of ginger for a bit of warmth - well the summers we have here in the UK aren't anything like the ones in India so this is refreshing and soothing too.

  • 150g ginger
  • 130g sugar
  • 1L water
  • juice from 8 lemons
  • 1 tsp rock salt or black salt as required
  • ½ tsp chaat masala
  • a few ice cubes

Method

  1. To make the ginger syrup peel the ginger and chop into roughly into chunks.
  2. Put the ginger, sugar and half the water into a pan and bring to the boil.
  3. Reduce the heat and leave it to simmer to reduce for about 40 minutes to an hour.
  4. Strain the syrup through a sieve and leave to cool.
  5. Strain the lemon juice into the remaining water and add the ginger syrup.
  6. Stir in the salt and chaat masala
  7. Check the flavour make any adjustments and leave to chill before serving over ice.
