Avocado Yoghurt

This is one of my favourite dips, fresh, cooling and delicious

I love avocado so finding new and interesting ways to use it is always a pleasure. This is a really delicious way to get avocado into your diet, you can have this for breakfast, as a dip or even as a salad dressing. 

It includes all things that are good, it's green, it's fresh and healthy so indulge and enjoy.

  • Method
  • 1 ripe avocado
  • 1 green chilli
  • handful of fresh coriander (including stalks)
  • big handful of baby spinach
  • 200ml greek yoghurt
  • juice of half lemon
  • 1 tsp cumin seeds
  • 1 tsp salt

Method

  1. Scoop out the avocado flesh and place it in a blender
  2. Add all the remaining ingredients and blend until nice and smooth.
  3. Check the seasoning and adjust if required.
