Light zingy lemon sorbet

Hari says

A gorgeously tangy sorbet that is perfect after a warming, spicy curry. This is simple to put together and is just great to have in the freezer for a simple pudding. If you don't have an ice cream maker then yes, get one (they are pretty cheap) but you can also make this without one.

  • Ingredients
  • Method
  • 1 cup water
  • 1 cup sugar
  • 1 to 2 cups of freshly squeezed lemon juice
  • 1 tbsp grated lemon rind

Method

  1. Place the water and sugar in a pan and set over a medium heat to dissolve all the sugar
  2. Once it has fully dissolved remove from the heat and leave to cool for about 5 minutes.
  3. Meanwhile, squeeze the juice from the lemons and stir the juice and rind it into the syrup. Stir it through.
  4. Once cooled pour the mixture into the freezer bowl of your ice-cream maker and leave to churn according to the manufacturers instructions.
  5. When it has frozen to form ice crystals put it into a freezer container (it will still be fairly soft), cover and freeze until it sets.

Note: If you do not have an ice-cream maker then put it into a container and freeze. After a few hours give it a mix through and put back in the freezer. Repeat 3 times.
