Jaggery (Gur)


Using Jaggery in Indian Cooking  

This is an Indian sugar made from sugar cane, date palm or coconut palm and has a brown crystalline structure with a fudge, treacle like taste.

The long canes are put through a press squeezing all the juice out. The juice is then boiled for many hours until it thickens and forms crystals. This is then left to set resulting in a solid sugar with a fudge like appearance.

Jaggery can be bought as a soft fudge or in hard blocks that have to be grated or pounded when used. I would recommend that you always stored it in a airtight container. If you cannot get hold of jaggery A dark muscavardo sugar works well as a substitute.
