Fresh Mint Mojito

A delicious fresh herb cocktail with a slight deviation from the traditional Mojito.

It's a fresh and light cocktail with a rum base. I like to add a slight Eastern twist with a tiny bit of fresh ginger. Give it a go you will love it.

  • 2 parts white rum
  • 1 fresh lime
  • 6 fresh mint leaves
  • 4 fresh corinader leaves
  • thin slice of fresh ginger
  • 2-3 tsp of caster sugar
  • dash of soda water
  • cubed ice
  • sprig of fresh mint

Method

  1. Cut the lime into wedges and squeeze the juice into a glass. Throw the lime wedges into the glass with the sugar and fresh ginger and squish everything together with a muddler (bar spoon, rolling pin etc) to release the fragrance and dissolve the sugar.
  2. Slap the mint and coriander leaves in your hands to relase the aromas and add to the glass.  
  3. Mix, then half fill the glass with cubed ice and pour in the rum. 
  4. Top with a splash of soda water and garnish with a sprig of mint.
