Fennel and Seafood Salad

I do love a salad, not only is it fresh but you can make a great salad with anything. This one is full of wonderful flavours and textures so it's worth the effort. I have griddled the fennel here but you can roast it or even have it raw. Oh and I think the whole dish looks great too.

Fennel is a wonderful ingredient that just isn't used enough. It has an aniseed aromatic with a wonderful crispy crunch to it. I love it in risotto and with seafood. This dish was a bit of an experiment with prawns, squid, and salmon that have all been marinated in a (simple) but different marinade, griddled fennel, and to finish it off I threw in a few slices of a fresh, ripe nectarine too. The dressing may sound a bit harsh with the garlic and chilli but it adds a lift and it was delicious so I had to share it with all you lovely people.

Salad

  • 200g raw prawns
  • ½ tsp chilli powder
  • salt to taste
  • 200g raw squid
  • ½ tsp turmeric
  • 1 fillet of salmon, skinned and chopped into chunks
  • ½ tsp chaat masala
  • salt
  • 1 bulb of fennel
  • 1 ripe nectarine, sliced
  • handful fresh coriander, chopped

Dressing

  • 20ml olive oil
  • juice of one lime
  • ½ tsp paprika powder
  • ginger, fine chopped
  • half green chilli, fine chopped
  • pinch dill, chopped
  • 1 clove garlic, crushed
  • Salt to taste

Method

  1. Sprinkle the chilli powder and salt on the prawns and griddle or fry in a pan until cooked through and set to one side.
  2. Sprinkle the squid with the turmeric and salt and fry until cooked through.
  3. Coat the fish with the chaat masala and place on an oven tray and cook at 180C for 5 minutes.
  4. Slice the fennel very finely and sprinkle with a little oil and griddle.
  5. Mix all the ingredients for the dressing and leave to one side.
  6. Place fennel into a bowl and sprinkle with coriander leaves, the cooked seafood and then pour over the marinade and toss together.
  7. Slice the nectarine and place into the bowl and serve.
