Using Green Lentils in Indian Cooking
These are sometimes known as continental lentils and are very similar to brown lentils but not as common. They have a full flavour with a little bit of a peppery bite and once cooked the lentils hold their shape really well giving a nice robust texture. These generally take the longest to cook at about 45 minutes.
