Using Star Anise in Indian Cooking
This is an amazing looking spice which is a star shaped seedpod that gives off a gentle aniseed or anise perfume.
This grows on a tree native to China and it isn't used a great deal in Indian cooking as it's more akin to Chinese flavours. It has a warming punchy aroma that I really enjoy and like to include it in some of my dishes.
