Indian rice pudding - smooth, creamy and lifted with a little cardamom.

Hari says

This is a creamy and delicious Indian rice pudding with warming cardamom to add a little bit of eastern mystery. When I was a kid I'd have this at the temple every week, so this brings back some really lovely memories for me. In India though, this would be made much sweeter than I've made it here, so feel free to adapt it to your own tastes. You can also jazz it up with nuts, almonds, raisins, whatever you fancy really. And the kids love it as they can get creative with the toppings.

  • 100g rice
  • 1.1L full fat milk
  • 4 green cardamom
  • 100g sugar
  • pistachios, crushed to garnish

Method

  1. In a large pan combine the milk and rice and stir to cook for about 25 minutes.
  2. Add the cardamom and stir for another 25 minutes.
  3. The mixture should now be thick remove the cardamoms and add the sugar and stir well.

Served with

Top with crushed pistachios to serve.

    Dear Hari,
    Before starting with the rice, do you wash and soak it before that or just cook it right away?

      Hi Aisha Thanks for using the website. Yes you can wash the rice before you cook the dish and its also ok to soak to rice for about 30 mins before hand. I hope you enjoy the dish so let me know how it turns out. Thanks Hari

      Hi Yes really straightforward you can use a pudding rice but I tend to just use basmati rice. Let me know it comes out. Thanks for commenting. Hari
