Spicy Lamb Chops

Perfectly grilled lamb chops for the summer

These are really easy to throw together when you have some friends pop by because all you have to do is just smear them with the marinade and leave them until you are ready to cook. They are great with potato wedges and a salad so perfect for barbecue season.

If you can't get hold of the Kashmiri chillies then just mix equal amounts of paprika (for colour) and chilli powder (for the chilli hit).

  • 4 lamb chops
  • 1 tbsp coriander seeds
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 5 dried Kashmiri chillies (or chilli powder mixed with paprika)
  • 4 cloves garlic, peeled and roughly chopped
  • 2 tbsp ginger, grated
  • 1 tsp salt
  • 1 tbsp rapeseed oil 
  • 1 lemon

Method

  1. In a pestle and mortar crush the coriander, cumin, fennel seeds and dried chillies.
  2. Then add the garlic, ginger and salt then grind with the spices to create a thick paste.
  3. Pour in the oil and lemon juice and mix together.
  4. Smear the paste all over the chops and leave to marinate for at least 1 hour.
  5. Ensure they are at room temperature and cook on a griddle or barbecue for 4-5 minutes on each side until cooked through.

    Another winner from Hari who is now my go to writer for Indian recipes. Served this with Quinoa Kosumbari and a bit of salad and raita. Went down very well!

    This is a fantastic recipe. Never fails to impress. Just make sure lamb chops are cut well...thin cut with no fat.

    Lovely looking recipe but cumin is mentioned in the method, though not listed in the ingredients.
