Tangy Fried Okra

A simply heavenly vegetarian dish cooked with fried onion, fragrant crushed coriander seeds and spicy chilli, then finished with a dusting of zingy mango.

There are many different ways of cooking okra or ladyfingers. This is the okra dish that my mum cooked for my dad as a simple, quick flash in the pan dish. It is delicious and makes a great side accompaniment to any Indian meal. My brother has always been a fan of okra and I'm hoping that just quoting his words will make you want to give this dish a go. Simply this is "food of the gods".

  • 500g okra
  • 3 tbsp mustard oil
  • 1 onion, finely sliced
  • 2 tsp coriander seeds
  • 1 dried red chilli/1tsp chilli flakes
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 2 tsp amchoor powder (dried mango powder)

Method

  1. Wash and thoroughly dry the okra (kitchen roll is great for this). 
  2. Remove the tops and slice the okra in half lengthways. Place the coriander seeds and red chilli into the pestle and mortar and pound until you have a coarse powder, then leave to one side.
  3. Heat the oil in a wok or non-stick pan on a medium heat, then stir in the sliced onions and cook until they just begin to brown.
  4. Add the okra and fry for about ten minutes, stirring now and then.
  5. Add the salt, turmeric along with the coriander and chilli mixture. Reduce the heat and leave the okra to cook for five more minutes (do not cover the pan).
  6. Once cooked, remove from the heat, sprinkle with garam masala and dust with the armchoor powder to serve.

Served with

I like to have my okra fairly crisp but if you prefer them slightly more soft continue to cook them for a little longer. These make a great accompaniment to any saucy dish and add a lovey contrast.

If you are like me and have spice cravings then try them on toast with a little yoghurt - you won't be disappointed.

    Hi Hari,

    I just wanted to write and thank you for the delicious recipes I have made at home. I do most of the cooking and my Mrs is Vegan but my daughter and I are not. Anyway, we have made a Ragav doctored version of your chicken tikka masala that my daughter and I loved! We've also made this recipe numerous times and tried the cumin spiced carrot dish which was simply easy and delicious.

    I'm really glad that I found your website as when I cook, it brings me happiness for my family and I and reminds me of my mum's cooking.

    It seems that mustard oil is not sold in the U.K for external use only. Is it ok to cook with it ? David

    Always used recipes previously which included tomatoes but you don't need them
    Such a simple dish with quite a small number of ingredients.
    Sweet, dry savoury and packed with flavour and no slimy okra.
    Get on it !!!!!

    Hi Hari,
    Rohan here, from India. Noticed your blog a couple of days ago. I'm not a person who cooks, but looking at all of these delicious dishes, explained in a very simple way, made me go in my kitchen and try something out.
