Delicious creamy coconut and vanilla ice-cream

I love making ice-cream at home, it' is just soooo easy and a half decent ice cream maker is pretty inexpensive so I would recommend getting one. It's great to have your own home-made ice creams in the freezer because you know exactly what's gone into them and you can make a whole range of flavours that you love.

Coconut is hydrating and cooling which makes it the perfect component for ice cream. This ice cream is deliciously refreshing and because it's light and soft it scoops beautifully.  On a hot summers day it's lovely just in a cone but it also makes a lovely compliment to a pudding for a dinner party. Make sure you melt the coconut oil so it fully incorporates into the mixture.

  • 400ml tin of coconut cream
  • 100g sugar
  • 2 heaped tbsp coconut oil, melted
  • 1 vanilla pod

Method

  1. Freeze the inside container of your ice cream maker overnight before making the ice cream.
  2. Place all the ingredients into a bowl and whisk together so it has all fully incorporated.
  3. Cover and cool for a while.
  4. Put the mixture into the chilled bowl of the ice cream maker and leave to churn for about 20 minutes until it's thick.
  5. Pour into a container and leave it to set in the freezer for about 2 hours.

    Can this be made without an ice cream maker? It sounds delicious.

      Hi Kevin I haven't tried it with but I don't see why not. I would put it in the freezer and every half hour or so bring it out and whip or mix it vigorously so it's light and fluffy when it sets. Let me know how you get on. Thanks for using the site Hari
