Cumin Soda, or jal jeera as it's called in India, is commonly drunk in hot countries to keep the body cool. The cumin in this recipe stimulates the digestive system, while the mint triggers the body's cooling mechanisms, the salt rehydrates and the sugar provides energy. It's super-quick to make, refreshing and has a distinctive flavour. Serve, with or without sugar, as an aperitif to wake up the taste buds before a meal, or sweeten it and enjoy as a refreshing drink on its own. If you don't fancy mint leaves floating in your glass, blend the ingredients until smooth

  • Handful of mint leaves
  • 2 litres soda water
  • 1 tsp toasted ground cumin 
  • ½ tsp ground black pepper
  • Juice of 2 limes
  • Good pinch of sea salt
  • 1 heaped tbsp sugar

Method

  1. Bash the mint leaves between your palms to release their flavourful aroma, then place in a jug with the soda water, cumin and black pepper.
  2. In a dish or using a pestle and mortar, mix together the lime juice, salt and sugar until the sugar has dissolved.
  3. Add the sugar mixture to the soda water, stir until well combined (or use a blender if preferred) and serve, with or without ice, in long glasses on hot days.
