Nimbu Pani

A refreshing Indian lemonade

Shrikanji or nimbu pani is a sure fire sign that summer is here. In the northern states of India it is sold on every street corner as an incredible thirst quencher but more importantly, it also replenishes salts and gives that sugar boost that is needed in soring temperatures. Even more importantly, it tastes amazing and it takes minutes to make. In India the lemons are smaller and they look like limes so either will do for this recipe, if you can't get hold of chaat masala or black salt then just miss it out. It's really important that you taste this because it is about personal taste, you may like this slightly sweeter so just adjust according to your tastes.

  • Method
  • 2 lemons or 3 limes
  • 2 glasses of water
  • 1 tsp cumin powder
  • 1 tsp rock salt or black salt as required
  • 1 tbsp sugar (may need to add more) 
  • ½ tsp chaat masala
  • 4-5 mint leaves
  • a few ice cubes

Method

  1. Put the water in a jug
  2. Slice the lemon and squeeze in the juice with the lemon squeezer, discarding any seeds.
  3. Add sugar, black salt, cumin powder, chat masala, mint leaves, and ice-cubes.
  4. Mix it all until the sugar dissolves and check the seasoning, adjust if you need to.
  5. Pour into tall glasses and add lemon slices if using. Serve chilled.
