Jazzing up a basic coleslaw with a few Indian flavours

A great little side dish that works with so many dishes and once you make your own version you will see how easy it is to add your own twist to an old school classic. Shredded cabbage, red onions and a few cumin seeds come together with a delicious fresh and fragrant vibe, all wrapped up in a creamy mix of yoghurt and mayonnaise.

There is simply nothing more satifying then making your own coleslaw so give it a go and tell me what you think.

  • Method
  • 2-3 medium carrots, peeled and coarsely shredded
  • half a white cabbage, cored and finely shredd
  • 1 red onion, halved and finely sliced
  • 3 tbsp Greek yogurt
  • 2 tbsp mayonnaise
  • Juice of half a lemon,
  • ½-1 red chilli (or to taste), finely sliced
  • ½ tsp cumin seeds, toasted
  • ½ tsp Kashmiri chilli powder
  • 1 tsp turmeric
  • ½ tsp salt (or to taste)
  • handful of fresh coriander, chopped
  • 40g cashews, toasted

Method

  1. In a large bowl, mix the carrots, cabbage and onion.
  2. Toast the cumin seeds in a dry pan until aromatic and keep to one side
  3. Toast the cashew nuts until golden and set a side.
  4. Mix the yogurt, mayonnaise, lime juice, chopped chilli, toasted cumin seeds, turmeric, chilli powder, salt and tip into the shredded veg mix. Stir to mix everything together.
  5. Stir in half the coriander and half the cashews. Top with remaining coriander and cashews just before serving.

Served with

Perfect with an spicy Indian barbecue or even in burger
